- 1/2 cup carrots chopped
- 1/2 cup green beans chopped
- 1 cup cauliflower florets
- 1/2 cup fresh or frozen green peas
- Curry -
- 2 tbsp coconut oil
- 1 bay leaf
- 1 cinnamon
- 10 curry leaves
- 1 onion chopped
- 1 tomato chopped
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp yogurt /curd
- 1.5 cup water
- 2 tbsp coriander leaves

- Heat oil in a pan and add bay leaf and cinnamon to it. Now add curry leaves and chopped onion to it and saute it until light pink in colour. Add tomato to it and cook it until little soft. Add turmeric, chilli powder, garam masala and salt to it and mix everything well. Now add the prepared kurma paste to it and cook everything for 5 to 7 minutes until the spices are cooked properly and the oil starts to release.
- Now add yoghurt to it and give it a good mix. Add all the prepared veggies to it and mix everything well. Add 1.5 cup water to it and cover and cook it on medium heat until vegetables are just done. Make sure that vegetables are not over cooked. Add coriander leaves and turn off the heat.
