- 1 small stick of cinnamon
- 1 bay leaf

- 1 tsp kashmiri red chilli powder
- 2 tsp coriander powder
- to taste Salt
- 1/4 tsp cumin powder
- 1/2 tsp garam masala powder
- 3-4 tbsp oil
- 1 tbsp curd
- 2 tbsp fresh cream or malai
- Handful fresh coriander leaves chopped
- as required Some fried cashews for garnishing (optional)
Steps to make to make Capsicum Onion curry
- First in a pan heat oil, add capsicum, onion. fry on medium heat for 2-3 minutes and take out in a plate. Also fry diced tomatoes too.
- Heat pan with tbsp of oil, add. Chopped onion, tomatoes, green chillies, ginger and garlic cloves. Cook for few minutes until gets soft (On medium heat).
- Let the mixture cool and then blend into the blender jar to make paste. For making curry - heat oil in pan/wok, add black cardamom, cinnamon stick, bay leaf and cumin seeds, let them splutter then add kashmiri red chilli powder, turmeric powder and stir quickly keep the flame low at this stage. Now add blended masala paste and mix well. Further add coriander powder, cumin powder, garam masala powder and salt. Cook covered for 2 mins until masala leaves oil.
- Now add curd and stir continuously, on low flame,cook for a min then add fresh cream stir well and cook for another 2 mins. Add water to adjust the consistency(As required). add fried capsicum, onion and tomatoes, gently mix cover with lid and cook for 2-3 mins on low to medium flame.
- Switch off the flame, delicious capsicum onion curry is ready, garnish with fresh coriander and some fried cashews (optional) and serve hot with roti n Chapati.
