  3. 1 tsp ginger garlic paste

  7. 1 tbsp sesame seeds
  8. 1 tsp kashmiri red chilli powder
  9. 1/2 tsp turmeric powder
  10. 1/2 tsp coriander powder
  11. 1/2 tsp cumin powder
  12. 1/2 cup milk
  13. As Per Taste salt and sugar
  14. 3 cardamoms
  15. 4 cloves
  16. 1 inch stick cinnamon
  17. 1/2 tsp garam masala powder
  18. 3 tbsp refined oil
  19. 1 tsp ghee
  20. 1 tbsp coriander chopped

Instructions to make to make Parwal Pasanda

  1. Slice off both ends of a pointed gourd (parwal). Peel the skin at intervals vertically. Make slits with a knife so that masala seeps inside parwal.Heat refined oil in a wok. Smear little salt and 1/4 th tsp turmeric on parwal and fry them till light brown and soft.Set aside.
  2. In the remaining oil sprinkle half crushed whole garam masala, cumin seeds, and bay leaf. When they splutter, add onion and fry till light brown. Add pureed tomato, ginger garlic paste, turmeric, red chili powder, coriander and cumin powder, Kashmiri red chili powder,salt, and sugar to taste and fry sprinkling some water and fry till oil leaves sides.
  3. Meanwhile make a paste of cashewnuts, sesame seeds, and green chili adding 2 tbsp milk. Add this paste to the frying masala and toss. Add the fried parwals and fry till oil leaves the sides. Add 1/2 cup water and boil till gravy is thick and almost coats the vegetable. Add the rest of the milk, ghee,garam masala, and chopped coriander.
  4. Garnish with slit red and green chilies and serve hot for lunch or dinner, a flavourful parwal pasanda as a side dish with steamed rice and dal, jeera rice, roti, paratha, or any Indian flatbread.
